Broccoli leek parsley soup 🍲 Mixed veg salad πŸ₯—




I usually don't go for shopping. Today went to get some veggies in a newly opened super market. When I saw veggies cooked in "Master Chef" i grabbed them without even thinking πŸ™ˆ after reaching home got confused with lots of YouTube recipes 😡 then after getting some guidance from BLMM members and tried these and it came out well.πŸ’œThis is my unusual shopping experience of today πŸ˜…πŸ˜… 


Never cooked before veggies :

Leek, Parsley and Cherry tomatoes


Salad : purple cabbage, red yellow capsicum, lettuce, leek, broccoli, cherry tomatoes, zucchini, salt, Italian herbs and sauce


Soup : butter, broccoli, leek, parsley, salt, garlic, pepper powder. Cooked and blended with water.

My version of Sweet Potato

Sweet potato comes under our evening snack menu once a week. We all love steamed & baked version of Sweet potatoes. I always make my evening snack simple and quick so that i wont get exhausted to cook dinner. So, let's have a look of my simpler evening snack version πŸ˜€



Steamed version :

Peal the skin and chop the potatoes.

Steam for 10 minutes in a steamer/Idli maker.

Sprinkle Chilli powder/Chaat masala.


Baked Version :

Peal the skin and Chop the potatoes

In a baking tray smear ghee.

Place the potato pieces on the tray with spaces in between.

Bake for 15 minutes(200C) by flipping in between.

Sprinkle Chilli Powder/Chaat masala/Cumin powder.

Lasagna, Cheesy Chicken & Fried fish steak

Food - always uplifts my mood. When i am down or i'm on a work break, i like to try new cuisine or our family favorite dishes. Today in between my weekly off from work, i wanted to try my families favourite dish Lasagna. I used to try various versions in this. This time tried with veggies and meat together. As always everyone in our family enjoyed the meal. 

Here is my version of Lasagna and Steaks



CHESSY CHICKEN

Marinate Chicken Breast steak (1 Kg), Minced ginger(1 tbsp) Minced garlic(1tbsp), Salt, Pepper powder(3tsp), lemon juice(1tsp) for 30 minutes.

Line up the marinated steaks in a baking tray. Bake for 15 minutes at 200C.

Remove and flip the steaks. Place the chesse slice over the chicken and bake again for 10 minutes.

Karupu uludham Kanji - Black urad dal porridge recipe


Black Urad dal porridge has ample of benefits when it comes to women's health. Today I wanted to try it again after a long trip and a week of sedentary work(Couldn't move around as usual).

There are various options in making this sweet porridge. We can add cashews roasted in ghee or add coconut into it. I am not a big fan of ghee and coconut so let's see my simpler version of karupu uludham Kanji 😊

Black Urad dal - 1 cup
Panam karkandu - 4 tsp
Cardamom powder - a pinch
Salt a pinch

*Wash and Soak black Urad dal for an hour.
*Grind it to a smooth paste.
*In a pan boil water and add the grinded paste.
*Mix well without any lumps.
*Let it boil till the raw smell goes off.
*Add the panam karkandu, cardamom powder and salt.
*Mix well and serve.

We had it as a dessert after our meal. My kids also had and liked it. Do try it and also let me know your version of this porridge in comment session 😊

Soup week - 5 days 5 different soups



Day 1 - Pumpkin carrot soup 

Butter, Saute 1/4 cup onion, 2 garlic, 1 cup yellow pumpkin, 1/2 cup carrot, salt - 3 whistles...blend with water add pepper powder...


Day 2 - Plantain stem soup

Oil, Saute plantain stem 1 , garlic 2, ginger 1 inch, salt..3 whistles...grind and filter. Add pepper powder


Day 3 - Corn spring onion soup

Butter, Saute 1/2 cup spring onion, 3 baby corn, 1cup sweet corn, salt, grinded paste(handful sweetcorn and water), add enough water. 3 whistles..sprinkle pepper powder


Day 4 - Palak soup

Butter - saute 1/4 cup onion, 2 garlic pods, 1 bunch palak, 1 bay leaf, 1 clove 1/2 inch cinnamon stick, 4-5 peppercorn. After cooked remove bay leaf and grind it. Add salt and 2 tbsp milk


Day 5 - Mixed Veg soup

Butter - saute onion, vegetables ( I used carrot, beans, cauliflower, peas, mushroom), minced garlic, salt. Add 4 cups water. Cook for 3 whistles. Add pepper powder

Smear butter on the tawa, roast the corn on all sides - sprinkle salt, lemon juice, chaat masala/chiili powder/ pepper powder

Veg Burger using left over veggies

 Friday's are always left-over cooking at home 





 It's a constant menu of Sambhar with all left over vegetables and a simple poriyal so is our simple snack 


 

Patty - onion, beetroot, potato, salt, chilli powder, gg paste, corn flour. Cooked, smashed and shallow fried 


Slice the burger bun, smear butter and cheese. Microwave for a minute.



Layering :  bun(flat side) - mayoniee - patty - tomato slice - bun(top)

Pumpkin Paratha

 Pumpkin Paratha 





 

In a bowl add wheat flour, grated yellow pumpkin and ginger, chopped green chilli and corriander leaves, salt, chilli powder, carrom seeds, turmeric powder, cumin powder. No need to add water while kneading as pumpkin oozes out lot of juice. Rest the dough for 30 minutes. Roll into thin disc and cook on both sides

Boiled Channa & Chawal ke pakora(Rice pakora)

 Boiled Channa 

Soak channa for atleast 8 hours.

Boil channa along with salt, sprinkle chaat masala and lemon juice. Serve 





Unplanned snack 


 Chawal ke pakora(Rice pakora)

Rice flour + curd + chopped onion, g chili, curry leaves, corriander leaves + chilli powder + cumin powder + salt

Deep fry and serve hot

Stuffed inside dough(used all purpose flour) and steamed for 15 minutes
